Reading: Sambal Dasehi Ghudugudi Tarakari: A Hearty Odia Mixed Vegetable Curry Recipe In a large pan, heat oil over medium flame. Add cumin seeds and let them sizzle for a few seconds. Then, add chopped onions, ginger paste, and garlic paste. Saute until the onions are translucent. Next, add potatoes, cauliflower, carrots, peas, and beans. Mix well to combine. Now, add turmeric powder, red chili powder, garam masala powder, salt, and sugar. Stir-fry for about 10 minutes or until the vegetables are slightly tender. Now, add 2 cups of water and bring to a boil. Reduce the flame to low and let it simmer for 20-25 minutes or until the vegetables are cooked through. Garnish with coriander leaves and serve hot with rice or roti.
