When all you’ve got is a dumpy dorm room and a stupidly small kitchen, what do you do when you need a snack? You could just grab and apple and a jar of nut butter, or you could cut up some carrots, but that gets boring sometimes. So, if you want to make something that doesn’t require too much effort but will satiate you until lunch or dinner, give some of these simple recipes a try!
1. Vegan Goldfish Crackers
If you’re feeling nostalgic while away from home in a too-small-for-anything dorm room, then these mock “goldfish” crackers are for you. They do require a stove to make, so I’m sorry if you don’t have one in your dorm, but if your friend has a stove, borrow it ASAP! They will make your life better and satisfy the rumblies in your tumblies.
2. Almond Cacao Cookies With Salted Maca Caramel
As a college student myself, I know the stress can add up and you just need something sweet and delicious to numb your woes, so when that happens, make these cookies. Trust me, they will make everything better (well, for the time being anyway). Basically, these cookies are made out of two things—almonds and dates—so don’t wine to me that they’re too complicated to make because all you do is chop stuff up in a food processor. They’re easy and amazing.
3. Green Fruit Smoothie With Wheatgrass Juice
Green smoothies are very simple to make and this recipe has a special spike of wheatgrass juice (which, if you don’t have it, you can most definitely leave out). Your mom probably equipped you with a blender for your dorm, but if she didn’t go out and get one for like $20—it won’t be a VitaMix, but it will get the job done. So, the next time your tummy rumbles between meals, whip up a green smoothie for a decent dose of fiber!
4. All For One Single Serving Banana Bread
Sometimes, you have a craving for just a small bite of a baked good, but you don’t want to make or go buy a big cake or loaf of bread because you’re afraid that you’ll eat it all. If that’s your current dilemma, then slap together this single serving banana bread because it’s petite and just right (Goldilocks would be proud) for curing your craving; plus, you can make it in your microwave!
5. Vegan Chik’n Salad With Cranberries and Pistachios
Get your rice cakes ready because chik’n salad is coming to town! This chik’n salad is special because it’s made without chicken, and it’s stuffed with cranberries and pistachios, making it doubly delicious, I promise! If you don’t like cranberries or pistachios, then you can easily substitute or remove them from the mix.
6. Tropical Coconut and Passionfruit Chia Pudding
Chia seeds are invading grocery stores everywhere, so you can most likely find these tiny seeds near your college campus, no problem. Buy them in bulk to save, stick them in some almond milk and coconut cream, and let them sit in the fridge overnight. In the morning, you’ll have a nice any-time-of-day snack to fill you up while you’re cramming for a test.
7. Raw Vegan Lemon Meltaway Balls
Almond flour, coconut flour, salt, lemons, maple syrup, vanilla, and coconut oil all intertwine to make these delectable little meltaway balls. Put these ingredients into a food processor and voilà, you’ve got yourself a quick snack, well really treat, to satisfy your hunger pains and your sweet tooth.
8. Raw and Healthy Vegan Chocolate Milkshake
This milkshake is not the healthiest of snacks, but it sure is better than the fast food alternative that’s chock full of questionable ingredients. If you have a blender in your dorm, whip it out and make this because you’ll be glad you did. There are few ingredients in this shake, and it’s delicious, so make it, dang it.
9. Fresh Veggie Summer Rolls With Spicy Garlic Peanut Sauce
These rolls don’t just look delicious―they are super nutritious too! They consist of rice noodles, rice paper (of course!), carrot, avocado, cucumber, basil, cilantro, kale, and red pepper—all of which sounds mighty tasty! Plus, if you don’t have a stove in your dorm, don’t worry, you can buy pre-cooked rice noodles. You can make the peanut sauce if you wish, but they’re good by themselves!
10. Raw Zucchini Wraps
This little darlings are quick to make and ultimately scrumptious. All you need is a food processor and some sort of flat surface to make them, and the ingredients aren’t exotic or hard to find at all. Zucchini, bell pepper, carrots, and sprouts are all readily available at any grocery store—well, maybe not the sprouts, but still, relatively simple ingredients. Roll up these wraps, and pop them in your mouth for a taste of goodness.
