Today is both Mexican Independence Day and National Guacamole Day, so to celebrate both holidays, how about eating a fiesta complete with the yummy green stuff? You don’t even need meat or dairy to make amazing Mexican food. Check out these tasty Mexican dishes. We’ll start out with a guac recipe that you can use for any of the other dishes.
1. Pineapple Guacamole
Try a variation on your classic guacamole recipe. In this version, the organic pineapple perfectly balances out the jalapeno so you get a nice mix of spicy and sweet with each bite.

2. Avocado and Black Bean Tortas
These tortas are a nice way to enjoy refried beans in sandwich form. Don’t forget the tasty sriracha cashew cream sauce from this Baked Stuffed Sweet Potato recipe.

3. Cilantro Avocado Chickpea Salad Tacos
To make the filling for these tacos, you mash chickpeas and avocado together. Delicious!

4. Easy Veggie-Loaded Quesadillas (No Cheese)
For these veggie-loaded quesadillas, you will make guacamole, as well as a filling from onions, spices and assorted fresh veggies. To bind everything together, use refried beans and hummus.

5. Tacos Sin Carne
No Mexican-style night would be complete without some tacos, and these will not disappoint. The recipe author says she fed them to a group of meat-eaters who were asking her for the recipe when they finished eating!

6. Colcannon Quesadillas
These quesadillas are packed with mashed potatoes, dark leafy greens and scallions. You choose a sauce: meant chutney, picante sauce, or green Tabasco sauce.

7. Raw Vegan Enchiladas with Chunky Salsa, Cheesy Sauce, and Spicy Nut Meat
This recipe does not require any cooking because it is 100% raw. You will make tortillas out of chopped onion, corn, tomatoes, ground flaxseeds, and then make a cashew cheese using nutritional yeast. The taco meat consists of walnuts, pumpkin seeds, olive oil, and spices, while the salsa contains the traditional tomatoes, onion and cilantro.
8. Cilantro, Lime and Black Bean Rice
If you love the cilantro-lime rice that you get at Chipotle, then try this recipe, which adds some black beans for protein. Serve this rice with guacamole over salad or inside taco or burritos.

9. Tamale-Inspired Bowl With Beans
You can serve these tamale-inspired bean bowls in individual pots to each person. Don’t forget to place a big bowl of guacamole with some tortilla chips on the table, as well.

10. Crispy Potato Soft Tacos
If you like the potato soft tacos that you can order at Taco Bell, then try making this recipe. Don’t forget the guacamole and salsa, of course!
