Happy National Waffle Week! What better way to celebrate than making vegan waffles for breakfast every day (or all day every day if you like to party hard)? If there’s any week to eat vegan waffles for breakfast, lunch, and dinner, it would be this one! Waffles are a supreme breakfast food. They are the perfect combination of crispy and soft. Their little pockets are also great for holding toppings! Even if you’re not a vegan waffle lover, we’re sure you can appreciate and try out one of these tasty recipes.

We’ve got everything from fruity breakfast waffles and sweet dessert waffles to savory falafel waffles.

Toss the frozen waffles aside in favor of something much healthier. These waffles are made with buckwheat flour, oat flour, brown rice flour, baking powder, baking soda, sugar and salt.

Buckwheat Brown Rice Waffles

Like falafel? Like waffles? How about a falafel waffle? You can even eat this one for lunch or dinner, complete with a heaping serving of raw veggies on top. Be sure to serve it with some hummus or tahini sauce!

The recipe author describes these waffles as being the lovechild of breakfast and dessert, and that description seems pretty accurate. This is a fudgy brownie taste and consistency in waffle form, and it sounds delicious, especially if paired with some whipped cream. Try this recipe as a dessert-for-breakfast treat this week.
