With their earthy, umami taste and meaty texture, mushrooms are a delicious staple in a vegan’s kitchen. We have shared some essential mushroom recipes to add to your repertoire, but those have largely relied on classic, and dare I say, boring mushrooms like baby bellas, portabellos, and creminis.
