You really only need two things to get started, then you can build from there with whatever toppings you love:

  • bread – sourdough bread is my go-to, but any sandwich bread, multigrain, or gluten-free bread will work.
  • cottage cheese – it not only adds creaminess, but it’s also packed with 7 grams of protein per 1/4 cup, which makes this toast more filling and balanced than plain buttered bread. If you’re not a fan of the curd texture, blending the cottage cheese makes it silky smooth, almost like cream cheese.
