Vegan and gluten-free pumpkin alfredo sauce requires just six ingredients: canned pumpkin puree, vegan butter or margarine, nutritional yeast, garlic powder, salt, and lemon juice.

  • 8 ounces rice noodles
  • 3/4 cup cashews (see notes)
  • 1 cup pumpkin
  • 1/2 cup almond milk
  • 1/2 cup nutritional yeast
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder

  1. Bring water to a rolling boil in a medium-sized saucepan. Let the dish rest for a few minutes before adding the rice noodles. Wait patiently while making the sauce.
