The sun is shining, you can smell the grass, and everyone is outside – can you smell the summer? This time of year, the farmer’s market is full of inspiration, one of which is usually the beautiful, sweet, fresh ears of corn. There is so much you can do with corn, including making desserts with it, such as this Mini Sweet Corn and Strawberry Cake.
Summer time is for sharing loads of food, running around and laughing outside, and cozy nights staring at the stars. Or if you’re living in a city, staring at the black sky filled with city lights from your apartment, eating leftover pizza. Corn fritters step up your summer meal game because what is more summery than ears of yellow, fresh corn? Corn fritters are generally simple to make, full of flavor, and extremely malleable in terms of adding or subtracting vegetables to include in them. Let’s get husking and check out these six delicious corn fritter recipes.
1. Corn Fritters With Homemade Sweet Chili Sauce
Fritters make a great appetizer or side dish, but always contain eggs, dairy, and white flour. These Corn Fritters With Homemade Sweet Chili Sauce have been veganized and are even more delicious than their counterparts. They are served with a homemade sweet chili sauce, as most sweet chili sauces contain fish sauce and other modified ingredients. As the weather gets nicer and you are able to buy local corn, by all means, replace the frozen corn with fresh! Just scrape the kernels off of 2-3 cobs.
2. Sorullitos: Puerto Rican Corn Fritters
Sorullitos are Puerto Rican corn fritters that are enjoyed as an appetizer or snack and are very similar to hushpuppies. These Sorullitos are super easy to make and only require a minimal amount of ingredients. Plus, the fritters alongside the dipping sauce make for the perfect comfort food.

Many mixes contain lard and whey.

These Corn and Bell Pepper Fritters are so versatile; they can be made large to be served as an entrée with veggies on the side or as bite-sized morsels topped with cashew sour cream for an appetizer. Sweet corn and red bell pepper are the perfect base for spicy chili pepper and fresh basil, though if you don’t have basil, any fresh herb will do. Whether you serve them for dinner or at a party, these crispy fritters will win you (and anyone else who eats them) over.
5. Baby Corn Fritters and Spicy Bell Pepper Stir Fry
This flavorful Baby Corn Fritter and Spicy Bell Pepper Stir Fry is inspired by an Indo-Chinese favorite — a delicious combination of colorful bell peppers stir-fried with spicy chilis, garlic, and onion combined with crispy baby corn fritters. Double-frying these baby corn fritters makes them really crunchy, the perfect contrast to the soft peppers. Be sure to add the fritters to the dish right before serving to prevent them from losing their texture!
6. Zucchini and Corn Veggie Burgers/Fritters
