Full of chocolate chips, chewy oats, crunchy peanut butter, and M&M candies, Monster Cookie Bars are a fun, convenient twist on the old favorite. Since childhood, Monster Cookies have held a special place in our family’s hearts as the go-to cookie of choice.
Each summer, we whip up a massive quantity of our family’s beloved monster cookies using my grandmother’s treasured recipe, saving the best for our annual camping adventure with loved ones. Despite having grand baking plans, one year slipped away without us being able to put them into action.
Monster Cookie Bars
With a few subtle tweaks to Grandma’s treasured recipe, I molded the cookie dough into a generous layer on the base of a large baking sheet. Cooling rapidly on the counter, the freshly baked bars had done so in a fraction of the time it would take to prepare a single batch of cookies.
The bars proved to be an enormous success with all who sampled them, earning rave reviews from the very first try.
Unexpectedly, these bars rivaled the iconic flavor of my beloved Monster Cookies.

Monster Cookies
Preheat the oven to 350°F. Cream the butter and sugars until light and fluffy. Combine the eggs, rich vanilla essence, velvety smooth syrup, and a pinch of baking soda in a single, harmonious mixture.
Stir in the peanut butter. The rolled oats are then added to the mixture, stirring vigorously until they are thoroughly incorporated. Mix in the chocolate chips.
Press the dough firmly into the bottom of a large, shallow baking sheet or jelly roll pan to ensure even coverage and prevent excessive spreading during baking. Top with the m&ms and lightly press them into the dough.
Bake for 16-17 minutes, or until the bars are golden brown and no longer appear moist on top. As they cool, these mixtures won’t be rigid; however, they’ll take shape and solidify gradually.
