  • 1 cup ground almonds
  • 1 cup coconut flour
  • 1/2 cup coconut sugar
  • 3/4 cup coconut oil, melted
  • 1 tablespoon ground chia seeds mixed with 3 tablespoons of water
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon grated orange zest
  • pinch of salt

Baking Vegan and Gluten-Free Almond Cinnamon Holiday Cookie Stars: A Delicious and Festive Treat for All

  1. Combine ground chia seeds with water, leaving the mixture to sit undisturbed for approximately 10 minutes, allowing the chia gel to form.
  2. Combining in a large mixing bowl, blend together ground almonds with coconut flour, coconut sugar, cinnamon, and salt to create the desired mixture. Combine chia seeds soaked in water to form a gel-like texture with the richness of vanilla, the subtle sweetness of maple syrup, the bright citrus note of orange zest, and the creamy depth of melted coconut oil.
  3. Combine thoroughly to ensure a uniform blend.
  4. Pre-heat oven to 350°F.
  5. Roll out the dough between two sheets of parchment paper or lightly floured surfaces, taking care not to overextend the dough, which may lead to an uneven texture. (If the mixture becomes fragile, a small amount of water may be added to maintain its cohesion.) Utilizing star-shaped cookie cutters, carefully craft cookies with a substantial thickness of at least one-quarter inch to ensure optimal texture and structure.
  6. Prepare a large baking tray by lining it with parchment paper.
  7. Place the cookies on a prepared baking tray and bake at 350°F (180°C) for 8-10 minutes, or until they develop a golden brown hue around their perimeters.
  8. Allow the treats to cool completely before dusting with a light coating of powdered xylitol or sugar, should you desire.
