Spicy Light Loaded Nachos [Vegan]

1 cup vegan tortilla chips (you can choose your favorite brand)
1/2 cup vegan cheese shreds (we love Daiya or Follow Your Heart)
1 can (16 oz) black beans, drained and rinsed
1 can (15.5 oz) corn kernels, drained
1 red bell pepper, diced
1 small onion, diced
1 jalapeño pepper, seeded and finely chopped
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon cumin
1/2 teaspoon smoked paprika
Salt and pepper to taste
Optional: 1/4 cup chopped fresh cilantro for garnish

  • 4 large tomatoes
  • 1 serrano chile pepper
  • 3 garlic cloves
  • 1/2-1 teaspoon of salt
  • One 15-ounce block of extra-firm tofu.
  • 50 grams finely chopped red onion
  • 1 1/2 cup black beans
  • 1 avocado, cubed
  • 1/2 cup cilantro
  • 5 radishes, thinly cut
  • 1 jalapeño, sliced
  • 1 bag of tortilla chips

Can you prepare vegan nachos that are spicy and low in calories? It’s definitely possible with a few simple ingredients!
