Pot pies just may be the ultimate comfort food. They’re warm, homey, casual, traditional, and oh, so satisfying. Eating a pot pie is like having your entrée, veggies, and a dinner roll all combined into one delicious bowl. You get a taste of everything in each bite.
Most pot pies have some type of meat and veggies plus gravy and are topped with some type of dough. Vegan pot pies may have tofu, seitan, or other meat alternatives plus veggies or be all veggie. But how about changing it up and making some pot pies that are creative, unusual and unexpected? Pot pies are just the kind of dish that allows you to put pretty much whatever you want inside. So, let’s let our imaginations help us create new kinds of pot pies with these fun and unexpected fillings.
1. Mac and Cheese
What do you get when you put two favorite comfort foods together? You get transported to heaven, that’s what. Mac and cheese is the ultimate comfort food so why not enjoy it in a little pot pie? Macaroni pie is actually a Scottish delicacy where a crisp, crumbly pastry crust is filled with macaroni and cheese. These dairy-free Mac and Cheese Pies have an incredible crust with a gooey, cheesy mac and cheese filling. And why stop there? 2. Samosas
When it comes to decadent Indian food, samosas have to be at the top of the list. Samosas are small hand pies that usually have a flavorful mix of potatoes, peas and other veggies surrounded by fried dough. But you can turn samosas into an awesome pot pie by taking that same filling and topping it with pie crust, phyllo dough or puff pastry. Try transforming these Curry Lentil Samosas, Green Curry Rice Paper Samosas, Potato Samosas with Coconut-Mint Chutney, and these Bengali Samosas into pot pies. You’ll also be amazed by this Rustic Samosa Pie.
3. Breakfast
There are breakfast burritos, breakfast bowls, and breakfast sandwiches so now, let’s make breakfast pot pies! Just take whatever your favorite breakfast foods are and put them in a pot pie. For my first invention, I’m choosing tofu scramble. This Antipasto Tofu Scramble, Jamaican Tofu Scramble, or my Southwestern Tofu Scramble would all make great pot pie fillings. Maybe top it with pie crust or better yet, a flaky biscuit. Next, let’s make an “Eggs: Benedict pot pie. Take the recipe for this Tofu Benedict With Mushroom Bacon, turn it into a pot pie with vegan hollandaise sauce and top it with an English muffin! Yum!
4. Italian
A lot of the best Italian dishes are made with delicious fillings and some type of dough. That’s the perfect combo of ingredients for an awesome pot pie. Take the filling of your favorite lasagna, baked ziti, cannelloni, or ravioli and put it in the ramekin. Top it with pasta dough and in no time, you have individually-sized Italian pot pies. Imagine this Cannelloni With Quinoa Mushroom Filling, Tomato Eggplant Lasagna With Cashew Mozzarella, Creamy Three-Cheese Spinach and Mushroom Lasagna, or Pumpkin Portobello Ravioli With Sage and Walnut Pesto turned into a pot pie!! 5. Mexican
We need a new day of the week because there’s Taco Tuesday but no day of the week starts with a “p” for our new invention – Mexican pot pies. There is no end to the number of fillings we can make for tacos, burritos, enchiladas, and bowls and there’s no reason not to use these fillings to make spicy pot pies. 6. Paleo
If you’re following a Paleo diet, you may think pot pies are not on the menu, but think again. It’s totally possible to make pot pies without using any bread or grains. These Black Bean Chili Pot Pies with Cumin Sweet Potato Crust have no dough, just potatoes on top. Isn’t that a shepherd’s pie, you ask? Kind of, but who cares? It’s delicious. Who says pot pies have to be savory? No one who has a sweet tooth. Use your favorite filling – apple, blueberry, pecan, or pumpkin – to name a few. But it doesn’t have to be a traditional pie filling – use cake, custard, cookie dough, or whatever makes your taste buds sing.
