There’s nothing like a retro dessert. This recipe always reminds me of birthdays in college when my friend used to make pineapple upside-down cake for my friends and me. Back then, neither of us was vegan and used eggs with willful abandon. This version is more hen-friendly but is full of nostalgia nonetheless.

Pineapple upside-down cake is one of my favorite cakes for summer. The caramelized brown sugar that coats the top compliments the tangy pineapple slices as if they were made for each other. This cake is moist and dense, meaning that you can make it 2-3 days ahead of time, and it will hold its texture perfectly. Substituting pecans for the maraschino cherries traditionally used in this recipe gives the cake an extra bit of flavor without the addition of dyes or preservatives.

  • This cake is best served fresh and still warm, but if you would like to save it for later, you can store leftovers in the fridge (just make sure to eat it within three days). You can also store it in the fridge for up to three months.
