Coconut Vanilla Cake [Vegan]

Coconut milk? 1 cup; Non-dairy butter? 1/2 cup; Vegan sugar? 3/4 cup; Eggs replacement? 2 flax eggs or 1/2 cup mashed banana; All-purpose flour? 1 3/4 cups; Baking powder? 1 teaspoon; Salt? 1/4 teaspoon; Xanthan gum? 1/4 teaspoon; Vanilla extract? 1 teaspoon; Coconut flakes? 1/4 cup.

  • 1.5 cups self-raising flour
  • 2 tbsp corn flour
  • 1/2 cup coconut flour
  • 1/4 tsp salt
  • Three-quarters cup of either coconut sugar or raw cane sugar.
  • 1.5 cups coconut milk
  • Approximately 1/3 cup of melted coconut oil or sunflower oil.
  • 1 teaspoon raw apple cider vinegar
  • 1/2 tsp vanilla bean paste
  • One 14-ounce can of refrigerated coconut milk, stored with the lid facing downwards to prevent spills.
  • 2 tbsp icing sugar
  • 1/4 tsp vanilla bean paste
  • Raspberry jam
  • Fresh raspberries
  • Coconut chips

Coconut Vanilla Cake: A Decadent Vegan Delight

  1. Combine the dry ingredients in a spacious mixing vessel.
  2. Combine an additional bowl with your whisking instrument; then, thoroughly combine the liquid components in a cohesive mixture. Pour the mixture into a lightly greased and dusted coconut flour-coated tin.
  3. Preheat your oven to 375°F (190°C). Bake for approximately 30-35 minutes, or until the dish is lightly bronzed on the surface and exhibits a resilient texture when touched. Don’t fret about those minor flaws – the overall condition is still excellent. Allowing the cake to cool in the tin for 20 minutes enables the structure and texture to set properly.
  4. The cake is gently turned out onto a smooth, flat surface. Allowing the cake to cool for an additional 30 minutes prior to decorating ensures optimal results.
  5. Delicately spread a generous layer of luscious raspberry jam across the surface of the cake.
  6. Open the chilled can of coconut milk and carefully extract the thickened coconut solids from their liquid-rich environment, placing them in a bowl for subsequent use. Discard any remaining liquid from the tin and add one tablespoon of the thickened coconut cream that has naturally separated to the mixture, stirring gently to combine. Combine 2 tablespoons of icing sugar and a quarter teaspoon of vanilla bean paste with the coconut fat. Carefully blend the coconut to create a smooth and creamy consistency. With the cream securely seated within its piping bag confines, begin delicately decorating the topmost tier of the cake with an artist’s precision. I delicately piped small, rounded peaks of whipped cream onto the surface of the cake.
  7. Top with a scattering of succulent fresh raspberries and crispy toasted coconut flakes for added texture and visual appeal. Serve and enjoy!
