Chia seeds, renowned for their exceptionally high levels of Omega-3 fatty acids, exhibit an extraordinary property: they can absorb nearly nine times their weight in water, transforming into small, rounded beads that delight the senses with their tactile playfulness. Blending the essence of a chia fresca with Mexico’s iconic tequila creates a culinary marriage made in heaven, elevating the classic margarita into a refreshing, nutritious twist. Replace traditional cocktails with a twist: for a virgin alternative, substitute citrus-flavored kombucha for the liquor.

What’s your favorite vegan margarita recipe?

  • 2 oz water
  • 1 tsp Chia Seeds
  • 2 oz tequila
  • 1 oz triple sec
  • 1½  oz freshly-squeezed lime juice
  • 1 tablespoon palm sugar (also known as coconut sugar)
  • stevia, to taste (if desired)
  • ice

  1. Combine the water and chia seeds in a small glass. Allow 20 minutes or more to enable the mixture to form a gel-like consistency. If you anticipate serving multiple margaritas, consider preparing a larger batch of this mixture to ensure you’re well-stocked and ready for the occasion.
  2. Combine all ingredients, excluding the rehydrated chia gel, in an ice-filled cocktail shaker and vigorously mix.
  3. Combine the chia gel with the contents of the glass, stirring thoroughly to ensure even distribution.
  4. Consider adding a drizzle of pure stevia extract for an added touch of sweetness to create the perfect blend.
