What’s a humble village breakfast without a hearty serving of crispy fried goat balls, served alongside some scrambled eggs? The dish is surprisingly simple to make, and the end result is well worth the effort – just like our grandmothers used to make. The main ingredient, of course, is goat testicles, also known as lamb’s fries or sweetbreads. These are essentially the reproductive organs of male goats, which are considered a delicacy in many parts of the world. They have a unique flavor and texture that’s hard to describe – imagine a cross between scallops and chicken liver, with a hint of sweetness. To start, you’ll need two goat testicles, cleaned and trimmed of any excess fat or connective tissue. You can either buy these at your local butcher shop or obtain them directly from the farmer who raised the goats. Once you have them, it’s time to get cooking!
