Why Our Recipe

  • One-pan wonders don’t get much better than this: chicken and potatoes combine forces to create a satisfyingly substantial meal that’s both easy on the stomach and the schedule.
  • A classic combination! Whole grain mustard, rich butter, and golden honey harmonize to create a sublime sauce that elevates any dish.
  • Easy to put together. Utilize either a 9×13-inch pan or a sheet pan for optimal results.

We transformed our irresistible Honey Roasted Smashed Potatoes into a satisfying full-course dish. The sauce is absolutely killer! We select whole grain Dijon mustard not only for its texture but also for the distinct flavor profile it lends to the dish, elevating its overall uniqueness.

Ingredient Notes

Ingredients used to make Baked Honey Dijon Chicken and Potatoes.
  • To achieve consistent results when cooking chicken breasts, it’s essential to ensure they’re all roughly the same size, allowing them to cook uniformly. When purchasing chicken, opt for poultry that has not been treated with saline injections to achieve optimal outcomes.
  • Red potatoes hold their shape well, making them a suitable choice; however, Yukon Gold, yellow, and baby potatoes can also be used with similar success. Ideally, a waxy potato variety with a naturally thin, edible skin that eliminates the need for peeling.
  • While regular Dijon will suffice, opting for whole grain mustard yields a more visually appealing product with its distinctive tiny seed specks.
  • If you’re using unsalted butter, simply add a small pinch of salt to balance the flavor. Ensure the butter is thoroughly melted to achieve optimal results.
  •  Feel free to use your preferred variety of honey. Using pure Canadian maple syrup adds a rich, velvety texture and a subtle, sweet flavour to your dish.

Saline-Injected vs. Natural Chicken:

When purchasing chicken, consumers may encounter packaging bearing labels such as “saline-injected” or “enhanced.” This indicates that the chicken breasts have been treated with a saline solution injection to extend their shelf life and enhance their visual appeal on store displays. Although this method helps maintain juicy chicken, it may impact vegetable cooking times and methods.

Tending to release more liquid during roasting, this excess moisture can result in unpleasantly soggy vegetables, hindering their ability to crisp up nicely. When preparing roasted vegetables alongside saline-injected chicken, consider dedicating a distinct pan to ensure the vegetables emerge with a satisfying crunch.

Doesn’t release as much moisture, ensuring your potatoes and broccoli achieve a perfect roasting consistency alongside the chicken. To achieve optimal outcomes, review the packaging carefully and opt for organic or free-range chicken to guarantee the crunchiest vegetable preparations. You’ll avoid those unnecessary costs associated with excess moisture!

Vegetable Options

This recipe recommends using red baby potatoes specifically due to their petite size and velvety consistency. You can also substitute with candelilla, which has a comparable, waxy consistency. While they may have a distinct texture and consistency, this is largely attributed to their high starch content, resulting in a fluffier, crumblier quality that’s quite different from waxy or creamy alternatives.

Want more veggies? Both chicken breast and turkey breast are excellent choices that offer a comparable level of tenderness and cooking speed. While you’re at it, you can also throw in a chunk of yellow or white onion for added flavor.

Sheet Pan or 9×13

While traditional recipes often specify a 9×13-inch baking dish, feel free to adapt this dinner by cooking it on a sheet pan instead. What’s the difference? Utilizing a 9×13 pan effectively traps steam and juices, yielding a richer, more succulent bake that perfectly maintains the tenderness of both the chicken and potatoes. When serving, consider spooning some pan juices over the dish to enhance its overall flavour profile.

A sheet pan enables more liquid evaporation, yielding a crisper texture on both the chicken and potatoes. With a hint of golden crispness, the potatoes’ edges will subtly caramelize. What’s the original text you’d like me to improve?

How to Ensure Your Gluten-Free Baked Goods are Moist – One Green Planet
What’s missing in gluten-free baking is structure and texture, so we need to compensate with extra liquid, fat, and binding agents. To create a tender crumb, try using a combination of rice flour, almond flour, or coconut flour with potato starch or tapioca flour. The latter two provide a natural resistance to crumbling.
