- 1 1/4 cups (5 ounces) 100% whole wheat flour
- 1 1/2 tablespoons sugar
- 1/2 teaspoon of salt, with additional for sprinkling over
- 1/4 teaspoon paprika
- 4 tablespoons vegan butter
- 1/4 cup plus 2 tablespoons of water (or a small additional amount as needed to achieve the desired consistency).
- 1/4 teaspoon vanilla
Preheat your oven to 375°F (190°C). In a large mixing bowl, combine 2 cups of whole wheat flour, 1/4 cup of rolled oats, and 1/4 teaspoon of salt.
- Preheat your oven to 400°F (200°C). Prepare two baking sheets by lining them with parchment paper or a non-stick silicone mat for effortless food release and easy cleanup.
- Whisking in a large bowl, combine the dry ingredients – flour, sugar, paprika, and salt.
- Using either one or two forks, work the Earth Balance or butter into the flour mixture until a crumbly texture is achieved. See image below. Combining the water and vanilla extract, I then proceed to pour the mixture into the bowl containing the flour and melted Earth Balance. Combine the ingredients thoroughly until a cohesive consistency is achieved. With a gentle firmness, I worked the dough between my palms, coaxing its tender mass into unity. Adding just the right amount of moisture to prevent things from getting stale, yet still allowing for a smooth flow.
- Split the dough in half. With a lightly floured surface or a non-stick silicone mat at your disposal, unfold and carefully roll out approximately one half of the dough to an exceedingly fine thickness of roughly 1/16th of an inch. Utilize a pizza cutter to slice your dough into the creative shape that suits your taste. Carefully arrange crackers onto the prepped baking sheet using a sturdy spatula. Repeat as necessary. Sprinkle with salt.
