4-Ingredient Vegan Apple Strudel with a Creamy Custard Filling

All you need to make this 4-ingredient vegan apple strudel with custard are:

For the Apple Strudel:

  • 3 tablespoons vegan butter
  • One half cup and one tablespoon of breadcrumbs.
  • One-third cup plus two teaspoons of brown sugar.
  • 14 ounces diced cooking apples
  • 1/4 cup chopped walnuts
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract/essence
  • 1 tablespoon lemon juice
  • 1 cap full of rum
  • 1 vegan puff pastry sheet

For the Custard:

  • 2 cups of non-dairy milk
  • 2 teaspoon vanilla extract/essence
  • 2/5 cup powdered sugar
  • 2 tablespoons corn starch

Prepared with ease and simplicity, this vegan apple strudel recipe requires mere 4 ingredients and a dollop of creamy custard for the ultimate indulgence.

  1. Preheat the oven to 360°F.
  2. Gently melt vegan butter in a saucepan over low heat. Add breadcrumbs and toast slightly. To sidestep vegan butter, consider toasting your ingredients in a drizzle of sunflower or coconut oil instead.
  3. In a bowl, combine the toasted breadcrumbs with brown sugar, chopped cooking apples, crushed walnuts, ground cinnamon, a hint of vanilla extract, a squeeze of lemon juice, and a splash of rum – approximately one capsule’s worth.
  4. Mix together with your hands.
  5. Unfold a sheet of puff pastry to its original dimensions. Spread the mixture onto the sheet in an even layer, centered in the middle, much like assembling a wrap. Carefully folding the lower portion of the sheet over the mixture, remove any excess paper and subsequently fold the upper segment over, ensuring a secure seal.
