The tantalizing fusion of sweet potatoes, amplified by the richness of banana and maple syrup, is further elevated by the vibrant burst of orange zest and juice. These vibrant, sumptuous treats boast a resplendent jewel-like hue, accompanied by an irresistible creaminess and undeniable delectability. The pièce de résistance for an unforgettable evening:

Don’t let leftover ingredients go to waste – get creative and find new uses for them! With the addition of a dash of flour, you’ll be rewarded with delectable Yam Cakes that boast a satisfying crunch on the exterior, while their interior remains silky and indulgently creamy. Whatever their name, I find these tubers utterly scrumptious.

Banana Mash Yam Cakes [Vegan]

Vegan Banana Mashed Yam Cakes: A Deliciously Wholesome Treat

  • Two large yams or sweet potatoes, peeled and diced into uniform cubes.
  • 1 medium banana
  • 1 Tbs. pure maple syrup
  • 2 Tbs. vegan butter
  • Freshly squeezed zest and juice from a single, succulent orange.
  • Pinch of nutmeg

Preparing Delicious Vegan Banana Mash Yam Cakes

  1. Add the yam cubes to a substantial pot and submerge them in cold water. Bring the pot to a rolling boil, then cover it. Let the yams cook until they’re tender when pierced with a fork, approximately 15-20 minutes. Drain the cooked yams and set them aside for further preparation.
  2. Combine the banana, butter, and orange juice in the same pot. Cook for about 2 minutes. The yams are readded to the cooking vessel. Combine the maple syrup, nutmeg, salt, pepper, and orange zest. Combining the ingredients in a harmonious blend, I thoroughly mash the yams.
  1. Take refrigerated leftover mashed yams. Add approximately half a cup of flour to absorb any excess moisture; you may require additional amounts depending on the specific ingredients and their levels of humidity. Shape the mixture into evenly sized patties and pan-fry them to a crispy golden brown. Enjoy!
