Banana Mash Yam Cakes [Vegan]
Vegan Banana Mashed Yam Cakes: A Deliciously Wholesome Treat
- Two large yams or sweet potatoes, peeled and diced into uniform cubes.
- 1 medium banana
- 1 Tbs. pure maple syrup
- 2 Tbs. vegan butter
- Freshly squeezed zest and juice from a single, succulent orange.
- Pinch of nutmeg
Preparing Delicious Vegan Banana Mash Yam Cakes
- Add the yam cubes to a substantial pot and submerge them in cold water. Bring the pot to a rolling boil, then cover it. Let the yams cook until they’re tender when pierced with a fork, approximately 15-20 minutes. Drain the cooked yams and set them aside for further preparation.
- Combine the banana, butter, and orange juice in the same pot. Cook for about 2 minutes. The yams are readded to the cooking vessel. Combine the maple syrup, nutmeg, salt, pepper, and orange zest. Combining the ingredients in a harmonious blend, I thoroughly mash the yams.
- Take refrigerated leftover mashed yams. Add approximately half a cup of flour to absorb any excess moisture; you may require additional amounts depending on the specific ingredients and their levels of humidity. Shape the mixture into evenly sized patties and pan-fry them to a crispy golden brown. Enjoy!
