Oh, potatoes, how do we love thee? If we were to count the ways, we would be here all day because these tubers are seriously versatile. Boiled, mashed, in a stew… and that’s not all. That’s probably why potatoes get their own holiday — like today, National Tater Day!
National Tater Day started back in 1843 in Benton, Kentucky, where townsfolk would gather for a festival with games, rides, and a potato eating contest in the name of boosting trade. Today, National Tater Day still exists. Not only is it the oldest continuous trade day in the United States, now everyone can get in on the fun!

1. Easy Potato Curry With Star Anise Rice
