Spicy Balsamic Tofu Veggie Kebabs

Introduction

Spicy Balsamic Tofu Veggie Kebabs [Vegan]

Ingredients

  • 1 block extra-firm tofu, pressed and drained
  • 2 Tbs. balsamic vinegar
  • 2 Tbs. gluten-free tamari
  • 1 Tbs. vegetable oil
  • ½ tsp. Kosher salt
  • ¼ tsp. black pepper, crushed
  • ⅛ tsp. red pepper flakes (or to taste)
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 1 tsp. dried thyme
  • 1 tsp. paprika
  • 2 garlic cloves, minced
  • ¼ cup low-sodium vegetable broth
  • 2 small zucchini (sliced into rounds)
  • 2 bell peppers (seeds removed, cut into squares)
  • 1 red onion (cut into bite-sized chunks)
  • 8 cherry tomatoes

Preparation

  1. Cubize the pressed and drained tofu. In a medium bowl, whisk together balsamic vinegar, tamari, vegetable oil, salt, pepper flakes, basil, oregano, thyme, paprika, minced garlic, and vegetable broth to form the marinade. Combine tofu cubes with some of this marinade (reserving extra for later use) and allow them to sit while you prepare your vegetables.
  2. Marinize the vegetables: Place zucchini rounds, bell pepper squares, and red onion chunks in a separate bowl or zip-top bag. Drizzle with 1-2 tablespoons of the reserved marinade (or freshly made if preferred) for enhanced flavour; marinate for no longer than 10 minutes to prevent excessive softening.
  3. Prepare skewers by soaking bamboo sticks in water for at least 30 minutes prior to assembly and grilling, preventing them from burning.
  4. Grill the tofu: Thread the tofu cubes onto soaked bamboo skewers. Grill over high heat until golden brown and cooked through, approximately 4 minutes per side.
  5. Thread vegetables: While tofu is cooking or following it on the grill, arrange marinated vegetables alongside pieces of tofu (e.g., 2 tofu cubes, a cherry tomato, pepper slices, zucchini rounds). A common configuration uses two tofu pieces with one cherry tomato and various other veggie combinations. Place skewers in a position to catch drips.
  6. Grill the vegetable kebabs: Once tofu is done, continue grilling the assembled skewers until the vegetables are tender but still retain their vibrant colour and slight crispness (about 4 minutes per side).
