Raw Banana Strawberry Ice Cream Cake [Vegan]

Ingredients

For the Ice Cream Mixture:

  • 4 frozen bananas
  • 1 cup strawberries (sliced or whole)

To assemble, slice one banana for layers.

Instructions

  1. In a high-speed blender, pulse the frozen bananas until they reach your desired consistency – think soft-serve ice cream style. Add strawberries one by one and blend briefly to incorporate their color while maintaining some thickness.
  2. Layer the sliced banana pieces with the vibrant green strawberry mixture in a 4-inch cake mold or similar small container.
  3. Freeze for approximately 15 minutes, just until firm enough to unmold without collapsing.
  4. Gently loosen the edges of the cake from the mold using a thin knife. Carefully remove it and transfer directly to a plate (it should hold its shape).

I often garnish this creation with edible flowers and fresh sage leaves for added visual appeal and subtle flavor notes.
