Raw Coconut Ice Cream [Vegan]

Ingredients

  • 2 cups soaked raw cashews
  • Coconut meat from 2 young Thai coconuts (about 1 3/4 cups)
  • 1 cup non-dairy milk
  • 3/4 cup agave or maple syrup
  • Seeds from 1/2 – 1 whole vanilla bean
  • 2 T vanilla extract
  • 1/2 teaspoon salt
  • 1/3 cup plus 1 tablespoon or so of coconut oil, melted

Instructions

  1. Blend all ingredients except the coconut oil in your blender (a high-powered model like Vita-Mix yields the best results) until smooth and creamy. Melt the coconut oil separately in a small bowl placed over a larger bowl containing hot water to keep it liquid during blending. Add the melted oil and blend thoroughly.
  2. Proceed with caution – this mixture is incredibly tempting before it’s fully frozen!
  3. If you have an ice cream maker, use it for optimal results as the freezing process takes longer than traditional methods.
  4. Alternatively, transfer the blended batter into several small, freezer-safe containers (allowing for single servings) and place them directly in the freezer. Stir occasionally every 30-60 minutes until firm but scoopable consistency is reached, ensuring a uniformly frozen texture.
  5. To create swirls or incorporate add-ins like nuts, nut butter, or fruit chunks, gently fold your desired additions into the ice cream batter once it reaches a thick, yet soft-serve consistency. This technique helps achieve the characteristic swirl effect without ingredients sinking to the bottom during freezing.
