Veggie garden tarts are so simple yet mouthwatering. With their crispy crust and umami fillings, you really can’t go wrong. Tarts can come in many variations and exciting flavors and are completely customizable. They are the perfect way to use up your fresh produce in a quick and easy dinner or summer barbeque. They’re usually topped with tomato, zucchini, asparagus, bell pepper, and smoky herbs. We wanted to tempt you with some savory ones that will be a hit at the dinner table all summer long!

What You’ll Need:

  • Readymade puff pastry
  • Garlic clove
  • Heirloom tomatoes
  • Mushrooms
  • Zucchini
  • Bell peppers
  • Olive oil
  • Salt
  • Pepper
  • Fresh dill
  • Nasturtium leaves and flowers
  • Toppings (optional): sriracha, salsa, tahini

Preparation:

1. Start by preheating the oven to 400 degrees. While waiting for the oven to heat up, line a baking tray with parchment paper and place the puff pastry on the tray. Spread some garlic over the pastry.
2. Using a separate baking tray, add the vegetables and lightly drizzle them with olive oil. Place both baking trays in the oven for about 15-20 minutes. The pastry should be golden brown.
3. Remove trays from the oven and let them cool. Add a sprinkle of dill, nasturtium leaves and flowers, salt, and pepper, and serve with sriracha, salsa, or tahini.
