  • 1 leek, halved and sliced
  • 1 garlic clove, minced
  • 1 thumb-sized piece of ginger, minced or grated
  • 2 portions udon noodles
  • Soy sauce (tamari for gluten-free)
  • Sushi vinegar (<0.5 tsp rice wine vinegar per 2 tbsp soy sauce)
  • <3-4 drops neutral oil + ~1/4 tsp sesame oil> Sesame oil and sunflower oil
  • Salt (to taste and for roasting)
  • Gomasio () Gomasio seasoning

How to Prepare Russian Kale and Roasted Squash Noodles [Vegan]

  1. Preheat your oven to 180°C (350°F). Bring a large pot of water to a rolling boil for the noodles.
  2. Carefully cube the butternut squash, ensuring uniform pieces. Place them on a baking sheet with a small amount of sunflower oil and salt. Roast for approximately 30 minutes, or until tender and easily pierced – this concentrates their natural sugars for enhanced flavour!
  3. While the squash roasts, halve and finely slice the leek.
  4. In a separate pan (ideally non-stick), heat a small amount of sunflower oil over medium heat. Add the sliced leek and cook gently until softened but not browned, stirring occasionally.
  5. Add the minced garlic and ginger to the leek pan. Stir-fry for about 1-2 minutes until fragrant and aromatic – be careful not to burn the garlic!
  6. Prepare the kale: wash thoroughly (see note below) and remove any tough stalks, chopping or tearing into bite-sized pieces. Add the prepared kale leaves to the leek/garlic mixture.
  7. Add a splash of sesame oil, soy sauce, sushi vinegar, and gomasio to the pan with the leek and greens. Stir well to combine flavours – cook until the greens begin to wilt gently into the dressing.
  8. Cook the udon noodles according to their package instructions (). Reserve about a quarter cup of the cooked noodle water before draining the noodles!
  9. Add the drained noodles (and optionally, some reserved pasta water) along with the finished butternut squash cubes into the pan containing the greens. Gently toss everything together to ensure even coating and warm through.
  10. Season final dish generously with more soy sauce or desired gomasio topping before serving immediately. A final sprinkle of gomasio adds a delightful umami crunch!
