  • 1 cup organic almond butter
  • 3/4 cups raw coconut crystals (or other granulated sugar)
  • 1/4 cup raw cacao powder
  • 1 cup vegan/gf chocolate chips
  • 1/2 cup organic pecans, chopped
  • 2 flax eggs (made by combining 2 tablespoons ground flaxseed with 6 tablespoons water)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon pink Himalayan salt

Preparation Instructions for Flourless Chocolate Chip Pecan Cookies [Vegan]

  1. Prepare Flax Eggs: Whisk together the ground flaxseed and water in a small bowl. Allow to sit briefly before use.
  1. Mix Ingredients: In a medium-sized mixing bowl, combine all remaining ingredients (organic almond butter, raw coconut crystals/cocoa powder, vegan chocolate chips, organic pecans, flax eggs) until thoroughly mixed.

Cooking Methods:

The mixture can be adapted for two different cookie styles:

  1. Drop Cookies: Spoon dollops evenly onto a prepared baking sheet and bake at 350°F (175°C) for about 10 minutes.
  2. Rounder, Traditional Cookies: Spoon the mixture onto the baking sheet, lightly patting each mound down with fingertips to flatten slightly before smoothing the edges gently. Bake as directed above.
