Press the “Saute” button on the Instant Pot and heat the olive oil until shimmering. 2. Sear the chuck roast on all sides until browned, about 2-3 minutes per side. 3. Add the chopped onion and minced garlic; cook until the onion is translucent, about 5 minutes. 4. Add the beef broth, red wine (if using), and thyme. Stir to combine. 5. Season with salt and pepper to taste. 6. Close the lid and set the valve to “Sealing”. Press the “Meat/Stew” button or “Manual” mode and adjust the cooking time to 90 minutes at high pressure. ?
