When my baby brother was ready to go off on his own, he asked me to come up with a recipe to soup up ramen. This was an instant favorite! This recipe is ridiculously easy, ready in only 15 minutes and packed full of flavor. If you have some ramen packs hanging around in your pantry, this is the perfect recipe to spice things up! Add some extra veggies and you’ve got a meal.

Ingredient Notes

Ingredients for making 15 Minute Sriracha Ramen Noodles.
  • Eggs: Use grade AA, large eggs and hard-boil them as part of the recipe.
  • Ramen: Found in the Asian foods aisle in your grocery store. You can also use the noodles from Top Ramen packs and discard the seasoning packets.
  • Sriracha: This is where the heat comes in. Start with a small amount and adjust according to your taste. You can even offer it on the side for those who demand the heat.
  • Honey: You can substitute it with maple syrup or agave nectar.
  • Sesame Oil: Use toasted sesame oil if you can for its distinct, intense taste.
  • Rice Vinegar: Use seasoned rice wine vinegar for added flavor, or unseasoned for lower calories. You can substitute apple cider vinegar or white wine vinegar, but the flavor will be slightly different with less of an Asian flair.
  • Soy Sauce: Use regular or low-sodium soy sauce. For a soy-free dish feel free to swap with coconut aminos.

Noodle Options

You can find packages of plain ramen noodles in the Asian section of your supermarket or at your local Asian grocer.

You can also just use packaged ramen noodles like Top Ramen that are usually sold for somewhere around 25 cents. Just discard the spice pack.

Alternately, you can purchase soba noodles which are very similar and cook quickly.

Add Veggies

Beef up this easy ramen with some extra veggies. We recommend broccoli, carrots, mushrooms, and bean sprouts. Steam the broccoli and carrots beforehand, and add the rest to the broth.

Adjust the Heat

For more heat: If you want to up the heat, you’ll want to double the amount of sriracha in this recipe. You can also add a sprinkle of red pepper flakes or even some fresh jalapeño, diced or sliced into rings.

For less heat: If you’re looking to tone it down, try cutting the amount of sriracha sauce in half, or even down to a quarter. At even 1 teaspoon of sriracha, you’ll still get the flavor of the sriracha with a much more tolerable level of heat.

Storage & Reheating

Refrigerate leftovers in an airtight container for up to 3 days.

Reheat on the stove over medium heat on the stovetop, stirring occasionally, until warmed through. If needed, add a bit of extra broth to thin it out, especially if the noodles have absorbed some liquid.

Microwave on high in 30-second increments, stirring in between, until warmed through.

What’s for dessert? Let me tell you, these chocolate brownies are a real treat. Here’s my take on the classic recipe. First, preheat your oven to 350°F (180°C). Now, get a large mixing bowl and whisk together 1 cup (200g) of unsalted butter, softened, with 2 cups (250g) of sugar. Yes, it’s a lot of sugar, but trust me, these brownies need it. Next, crack in 4 large eggs and whisk until smooth. Now it’s time to bring in the chocolatey goodness! Melt 1 cup (120g) of dark chocolate chips or chunks with 1/2 cup (60g) of unsalted butter in a double boiler or in the microwave in 30-second increments, stirring between each interval. Once melted and smooth, let it cool slightly before whisking it into the sugar mixture. Don’t overmix! Now it’s time for the flour – 1 1/2 cups (190g) of plain all-purpose flour, to be exact. Whisk until just combined, then stir in a pinch of salt. Pour the batter into an 8-inch (20cm) square baking pan lined with parchment paper and smooth the top. Pop it in the oven for about 25-30 minutes or until a toothpick comes out with a few moist crumbs attached. Let those brownies cool completely in the pan before cutting them up and serving. And that’s it! A rich, fudgy, and utterly divine chocolate brownie recipe. Enjoy!
