While we’re huge fans of apple pies, tarts, and galettes, apples can be used in a variety of ways — and we’re here to showcase some of our favorite plant-based recipes that feature autumn‘s favorite fruit in new and exciting ways. Nothing compares to homemade pesto. This raw pesto has a pleasant blend of different flavors. Capers bring saltiness, tomatoes bring umami, apple adds a hint of sweetness, and you can add whatever fresh herbs you like. If you want to feel like you’re working in an authentic Italian kitchen, you can make the pesto in a mortar and pestle or just use a blender for convenience. Serve with your pasta of choice and garnish with fresh herbs.
