Ingredients You Need for Apple Pear Cranberry Gingerbread Crisp [Vegan, Gluten-Free]

For the Filling:

  • 6 cups diced apples and pears (2 to 3 of each, cored and chopped into small chunks)
  • 1 cup frozen unsweetened cranberries
  • 1/4 cup coconut sugar or Golden sugar-free monk fruit sweetener
  • 1 tablespoon fresh lemon juice (or juice from 1/2 lemon)

For the Topping:

  • 1 1/2 cups gluten-free rolled oats
  • 1 cup coarsely chopped pecans
  • 1/2 to 3/4 cup cultured vegan butter, melted
  • 1/2 cup all-purpose gluten-free flour
  • 1/4 to 1/2 cup coconut sugar or Golden sugar-free monk fruit sweetener
  • 1 1/2 to 2 tablespoons gingerbread spice mix, adjusted to taste (recipe below)
  • 1/2 teaspoon coarse sea salt

For the Gingerbread Spice Mix:

  • 3 tablespoons ground cinnamon
  • 2 tablespoons ground ginger
  • 1 tablespoon allspice
  • 2 teaspoons ground nutmeg
  • 1 teaspoon ground cloves
  • 1/2 teaspoon ground cardamom
  • pinch of black pepper

How to Prepare Apple Pear Cranberry Gingerbread Crisp [Vegan, Gluten-Free]

For the Gingerbread Spice Mix:

  1. Mix all the ingredients together and transfer them to an airtight container such as a mason jar. Store in a cool, dry place for 3 to 4 months.

For the Crisp:

  1. Preheat oven to 350°F and grease an 8×8 inch baking dish or cast-iron skillet with coconut or avocado oil. Set aside.
  2. Add chopped apples, pears, cranberries, sugar or sweetener (if using), and lemon juice in a medium bowl. Stir to combine, then transfer to prepared baking dish, spreading evenly.
  3. Combine the oats, pecans, 1/2 cup vegan butter, flour, sugar, 1 1/2 tablespoons gingerbread spice, and salt in a separate bowl.
  4. Mix with a fork or pastry cutter until a sticky and crumbly topping is formed, adding additional butter as needed and/or spice mix to taste. Spread evenly over the fruit mixture.
  5. Bake for 45 to 60 minutes, or until the apples are tender and the topping is golden brown and nicely crisped. If the topping starts to become too brown, cover with aluminum foil and continue baking until the apples are done.
