What are Ground Beef and Zucchini Scrambled Eggs?

The recipe is a combination of ground beef, tomato, eggs, and zucchini. All you have to do is cook them and mix them all up.

You can quickly make keto beef and zucchini scrambled eggs with a few ingredients. It is also budget-friendly and highly healthy for you.

Have it for breakfast, lunch, or even dinner, and remember that you can always switch ingredients with other keto friendly ingredients. 

It contains only 400 calories and keeps you full for a long time. Even if you don’t follow a keto diet, you can always cook it for a balanced meal for the whole family or yourself.

Ingredients

  • Ground Beef (6 oz)
  • Zucchini (1 large, chopped)
  • Onion (1 medium, chopped)
  • Vegetable Oil (4 tbsp)
  • Tomato (1 large, peeled and chopped)
  • Tomato Paste (1 tbsp)
  • Eggs (2 Medium)
  • Salt and pepper to taste

Instructions

  1. Preheat a large and shallow pan.
  2. Add ground beef and leave it to release and absorb the water. Remember to stir the mixture occasionally while cooking.
  3. Add chopped onions and vegetable oil when the ground beef has absorbed the water well.
  4. Fry them well.
  5. Add tomato paste and fry some more.
  6. Add salt and pepper.
  7. Cut the zucchini in half down the middle, and then cut the halved zucchini in half lengthwise again, then chop them into 1-inch pieces.
  8. Add chopped zucchini to the frying mixture and continue frying.
  9. Close the pot lid, reduce the heat, and cook with the lid closed until the zucchini becomes soft.
  10. Add peeled and chopped tomato, mix, and close the lid again.
  11. Put 2 eggs in a small bowl, add salt, and whisk the eggs.
  12. Drizzle whisked eggs all over the meal, reduce the heat, close the pot lid, and cook until the eggs are cooked.
  13. Serve immediately.

Notes

You can add different spices, such as chili flakes and cumin, when adding salt and pepper.
