What is Keto Chicken Skewers in Oven?

Vegetables and chicken are threaded on skewers in order and then baked in the oven. This flavor isn’t like other homemade chicken skewers. But why?

When it comes to chicken breast, it is generally inevitable that the chicken will dry out. Afterward, it is unavoidable to end up with tasteless chicken breasts. But this dish is different. Because this marination process saves them from losing too much water during baking and drying out, another secret is the baking technique.

Without further ado, let’s jump into the step-by-step recipe and learn how to make the best keto chicken skewers in the oven.

Ingredients

  • Chicken Breast (3 breasts, bone and skin removed, chopped)

Ingredients for Marinated

  • Greek yogurt (2 tbsp)
  • Olive oil (5 tbsp)
  • Juice of a large onion (grate, squeeze, and keep the juice to use)
  • Garlic (3 cloves)
  • Rosemary (1 sprig)
  • Dried thyme (1/2 tsp)
  • Cumin (1/2 tsp)
  • Paprika (1/2 tsp)
  • Salt and pepper to taste

Other Ingredients

  • Red pepper (1)
  • Zucchini (1, medium)
  • Mushroom (8)
  • Olive oil (2 tbsp)
  • Salt and pepper

Instructions

  1. Grate a large onion, squeeze out the juice, and add only the juice of the onion to a large bowl. Grate the garlic and add it to the bowl. Add 10 tbsp of olive oil, Greek yogurt, salt, and all the spices, and mix well. Add the diced chicken breasts and mix thoroughly. Cover this bowl with cling film and leave it in the refrigerator for at least 1 hour.
  2. Chop all the vegetables in the other ingredients except mushrooms into medium thicknesses and sizes. Mix these vegetables with 2 tbsp olive oil, salt, and pepper.
  3. Preheat the oven to 180°C / 356°F.
  4. Thread the skewers alternately with mushrooms, vegetables, and chicken. Continue until all the ingredients are used up. Line a baking tray with baking paper. Place this tray in the middle of the oven and place an oven wire rack on it. Arrange skewers on the wire rack, then bake for 20-25 minutes and serve.

Notes

The marinating process is one of the most critical steps of a chicken dish. The longer you let it sit, the tastier the dish will be. If you don’t have a time limit, put the chicken in the fridge the night before and let it marinate.

You can also use chicken thighs instead of breasts.
