German startup Neggst is revolutionizing the plant-based egg market with its innovative products that closely mimic the structure and functionality of real eggs. Unlike most vegan egg substitutes, which are generally used as ingredients in recipes, Neggst’s offerings include separated yolk and white components, enabling a more authentic egg experience.

Neggst currently produces a range of products, such as Sunny-side Neggst and poached Neggst, along with Neggst bites and patties. These products are made using various production methods, including sous-vide and oven processing, to achieve different textures and flavors. Building on its success, Neggst aims to tackle the largest segment of the egg market by developing a raw plant-based egg for retail, potentially with a shell. This ambitious plan sets Neggst apart in the vegan food industry, where egg substitutes have yet to gain a strong foothold compared to plant-based meat and dairy alternatives.

One of Neggst’s key advantages is its collaboration with egg manufacturer Ovofit, which provides the production capacity needed to test and refine its products. This partnership allows Neggst to focus on research and development without the common hurdles faced by smaller startups in finding reliable production partners.

Neggst’s products are crafted from fava bean, pea, and sweet potato proteins, predominantly sourced from across Europe. Notably, these plant-based eggs typically achieve an A rating on the Nutri-Score scale, surpassing traditional chicken eggs, which usually score a B. Additionally, Neggst’s eggs are rich in B12 and contain 50% of the protein found in chicken eggs.
