Change up your Friday night pizza routine with this Cilantro-Lime Chicken Pizza and you’ll get ALL the compliments. We’ve created a simple combination of ingredients that when all is said and sliced, brings pizza to a level you never realized you wanted. We have a love affair with cilantro and lime. We’ll eat cilantro and lime in a box or with a fox, here or there, pretty much anywhere! We love it so much we’re willing to go all Dr. Seuss up in here. We also have a separate love affair with pizza. Let’s be real, we have all the love affairs when it comes to food. It’s because of these love affairs that we united two of our loves into this Cilantro-Lime Chicken Pizza. The result is an especially tasty dish. Dr. Seuss, eat your heart out.
Keep changing Friday nights, or any night, with a few of our other pizza combinations like Pizza Quesadillas, Blackberry Basil Ricotta Pizza, or Greek Pizza.
Why Our Recipe
- A quick blend of cilantro, lime, and green chiles forms the base of the sauce and brings all the flavor.
- Top with shredded or diced chicken, mozzarella, and sweet onion.
- Make it because you won’t be sorry.
The best pizzas are baked in pizza ovens, and on pizza days we talk about installing a pizza oven in The Collaboratory. Pizza ovens are insanely hot (surpassing 800 degrees Fahrenheit) so the pizzas bake hot and fast in a way that gives you a crispy crust with deliciously melty cheese. Making a restaurant-quality pizza at home is still possible, but you’ve got to know the tricks. Allow us to educate you.
Ingredient Notes
- Pizza Crust: Use your favorite crust or use our refrigerator pizza dough, easy pizza dough, or Italian-style pizza dough.
- Cilantro: Substitute with parsley if you’re one of those who taste soap when eating cilantro.
- Green Chiles: No need to drain the can. You can use mild, medium, or hot green chiles depending on your personal preference.
- Lime Juice: 2 limes will give you about a quarter cup of juice, and while fresh will give a little more zing, feel free to substitute for bottled lime juice.
- Cumin: Brings a little Tex-Mex vibe.
- Chili Powder: Use quality chili powder as they aren’t all the same.
- Crushed Red Pepper Flakes: A way to control the spice level. Our recipe is a medium heat.
- Chicken Breast: Use leftover chicken, rotisserie chicken, or cook fresh chicken, then dice or shred it.
- Mozzarella: The best pizza cheese.
- Sweet Onion: Use Vidalia, Maui, or Walla Walla onions.
Cooking Time
Whether you are using a pizza stone, a pizza pan, or even a fancy pizza oven, the cooking time will always vary slightly.
Cook until the cheese starts to brown. Don’t worry about the crust underneath burning. Go. By. The. Cheese. When the cheese begins to bubble and brown, you have reached the point of deliciousness.
Storage and Reheating Instructions
Refrigerate leftovers in an airtight container for up to 3 days.
Reheat on the stovetop by placing a slice in a skillet on medium-low (no oil), cover with a lid or aluminum foil, and wait until the cheese is freshly melted.
Reheat in the air fryer by placing a slice in the air fryer basket. Set the temperature to 350 degrees and air fry 2 minutes.
