Drain the soaked rice and add it to the saucepan. Stir gently to combine with the vegetable mixture.8. Add 2 cups of water and bring the mixture to a boil. Reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer for 15-20 minutes or until the rice is cooked and fluffy.9. Turn off the heat and let it rest for 5 minutes before serving.10.
