  • 2 1/2 tablespoons agave
  • 1/4 cup oat flour
  • 1 scoop vegan protein powder
  • Sprinkles (optional)

Here’s how to prepare no-bake cake batter protein cookies that are both vegan and gluten-free:

  1. Mix everything together. I add small increments of protein powder (or oat flour) to the mixture, continuing to mix until a cohesive dough forms that is neither too sticky nor too dense.
  2. Form into small spheres, then gently press each one flat using a fork’s tines.
  3. When warmed, the dough becomes significantly softer and more pliable. When refrigerated, these treats will firm up but remain delectable.
