  • 2 tablespoons olive oil
  • 1 teaspoon garlic, pressed
  • 1 teaspoon ginger, grated
  • 1 cup pumpkin, cubed
  • 1 cup carrots, sliced
  • One-half head of cauliflower, broken into bite-sized florets.
  • 1 cup red peppers
  • Three cups of fresh spinach, finely chopped (or one cup of frozen spinach, thawed and drained)
  • 1 cup pumpkin puree
  • 2 tablespoons Red curry paste
  • 1 tablespoon crushed chili peppers
  • 1 can full-fat coconut milk
  • 1 cup of cashews
  • Cilantro, chopped
  • Salt & pepper
