  • 1 teaspoon olive oil
  • 1 clove garlic, diced
  • 1 sweet potato, spiralized
  • 1/2 cup frozen edamame

For the Salad:

  • 3 cups baby spinach
  • 1 cup shredded cabbage
  • 3 green onions, diced
