Coconut Creamy Delight: 5-Ingredient Vegan and Grain-Free Lime Syllabub

Full-fat coconut milk, freshly squeezed lime juice, maple syrup, salt, vegan vanilla extract

  • Fourteen fluid ounces of full-fat coconut milk, chilled.
  • 4 tablespoons coconut yogurt
  • 2 tablespoons maple syrup
  • 2 limes
  • 1 teaspoon toasted coconut chips

What’s a Sweet Treat Like You Doing in This Recipe?

  1. Scoop out the solid coconut cream from the chilled can, separating it from the clear coconut water. Discard or reserve the latter for future use in a different culinary application. In a large mixing bowl, gently spoon in the coconut cream, followed by the addition of coconut yoghurt. Using an electric whisk, blend the cream, yoghurt, and maple syrup in a smooth, continuous motion for approximately five minutes, as the mixture begins to take on a light, airy texture and tenderly forms gentle peaks.
  2. Meanwhile, finely grind the lime zest and prepare one lime by cutting it in half to facilitate juicing.
  3. Carefully fold the lime zest into the creamy concoction, reserving about one teaspoon to garnish, before incorporating the juice of half a lime.
  4. Spooned into dessert glasses, garnish with a scattering of toasted coconut flakes and a sprinkle of citrusy lime zest for a visually appealing finish.
