High-Protein Chickpea-Filled Sweet Potatoes with Garlic-Tahini Sauce (Vegan Recipe)

4 large sweet potatoes
1 can chickpeas
2 cloves garlic, minced
1/2 cup tahini
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper

  • 4 medium sweet potatoes
  • 1 teaspoon oil
  • One 13-ounce can of chickpeas, drained and rinsed.
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 cup tahini
  • 2 garlic cloves
  • 2-3 tablespoons fresh lemon juice
  • 2 tablespoons water
  • Salt and pepper
  • 1/2 cup chopped fresh parsley

High-Protein Chickpea-Stuffed Sweet Potatoes with Garlic-Tahini Sauce (Vegan): A Nutritious and Satisfying Meal

  1. Preheat the oven to 400°F.
  2. Prick several small holes in each sweet potato with a fork to allow steam to escape while they bake. Bake in a preheated oven at 375°F (190°C) for 30 to 45 minutes, or until the sweet potatoes are cooked through and tender when pierced with a fork.
  3. As the potatoes cook, prepare the chickpeas simultaneously.
  4. Warm the oil in a spacious skillet to a moderate temperature. As the aromatics sizzle and the spices infuse, add the chickpeas, the smoked paprika, and the earthy cumin to the pot, allowing their flavors to meld harmoniously.   5. Combine tahini, garlic, lemon juice, water, and a pinch each of salt and pepper in a blender or food processor. Blend until the mixture is silky smooth and well combined. The amount of liquid required in this recipe depends on the strength and capacity of your blender. You may need to adjust the proportion of lemon juice and water accordingly.
  6. Sweet potato halves are topped with a harmonious balance of chickpeas and fresh parsley, creating a visually appealing dish. Drizzle with tahini sauce.
