  • 3/4 cup coconut sugar
  • Approximately 60ml of liquid-state coconut oil or a suitable vegetable oil alternative.
  • Optional: 1/3 cup vegan sour cream (omit for a denser, less moist crumb)
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda

Smoothly spreading the residual pumpkin batter atop the cream cheese layer, use a gentle touch to avoid disrupting its uniformity, then carefully coax the mixture towards the periphery and corners of the baking vessel. Bake for approximately 48 minutes, or until the crust has puffed into a golden brown dome and the internal temperature reaches 190°F (88°C), as confirmed by a toothpick that emerges with only a hint of moisture and no remaining batter.
  3.
