1 cup cashew cream cheese alternative
1/2 cup granulated sugar
1 tablespoon lemon juice
1/4 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/4 teaspoon salt
1 cup non-dairy milk
Vegetable oil or cooking spray for greasing the pan
Blueberry drizzle (see below)

  • 1 cup non-dairy milk
  • 2 cups water, divided
  • 1/2 cup vegan butter, melted, with additional butter reserved for frying.
  • 2 cups unbleached all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1 tablespoon vanilla extract

  • One 14-ounce block of firm tofu, drained and thoroughly rinsed, then pressed for a full hour to remove excess moisture.
  • One 8-ounce container of softened vegan cream cheese.
  • 1 tablespoon nutritional yeast
  • 1/4 cup granulated sugar
  • 1 teaspoon salt

  • Confectioner’s sugar, for dusting
  • Blueberry sauce

Preparing Delicious Vegan Cream Cheese Blintzes with a Luscious Blueberry Drizzle

  1. Combine the milk, 1 3/4 cups of water, melted butter, whisked flour, pinch of salt, granulated sugar, and a hint of pure vanilla extract in a blender. Blend until fully mixed.
