Swiss Chard & Mushroom Rosè Sauce

  • 12 cremini Mushrooms, chopped

  • 4 swiss chard leaves, chopped
  • 1 tablespoon olive oil
  • 1 can pureed tomatoes
  • 1/2 block cashew-based soft cheeze
  • 1/4 teaspoon oregano
  • 1/4 teaspoon basil
  • 1/8 teaspoon thyme
  • 2 teaspoons garlic powder
  • Salt to taste
  • Pepper to taste
  • 1/8 teaspoon red chili flakes

Pasta & Assembly

  • One serving of cooked and drained chickpea pasta.
  • A squeeze of fresh lemon juice to liberate those caramelized flavors and add a burst of citrusy zest.
  • Vegan parm to top

Preparing a Delicious Vegan, Gluten-Free Mushroom and Swiss Chard Pasta with Creamy Rose Sauce

  2. With the pasta boiling, prepare your vegetables, and in a separate pan, heat the olive oil over medium heat, ready for the next step.
  3. With the oil warmed, start by caramelizing the onions to a rich, dark brown, then add the mushrooms and garlic, cooking until they’re tender and fragrant.
  4. Once the mushrooms have developed a rich, caramelized flavor, introduce the Swiss chard to the pan and quickly wilt the leaves, allowing their natural bitterness to balance the earthy aroma of the fungi.
