• 1 teaspoon baking soda
• 1 teaspoon salt

• 1/2 cup coconut oil
• 2 large eggs, replaced by 2 flax eggs*
• 1 teaspoon vanilla extract
• 1/4 cup activated charcoal powder

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1-2 tablespoons activated charcoal
  • 1/2 teaspoon salt
  • 1 1/2 cups powdered sugar
  • 1/3 cup coconut oil, melted
  • 50 milliliters of ambient-temperature almond milk.
  • 1 1/2 teaspoons vanilla extract

What’s the Scoop on Soft-Baked Vegan Activated Charcoal Cookies?

  1. Preheat oven to 350°F degrees. Preheat your oven and line baking sheets with parchment paper to ensure effortless food release and easy cleanup.
  2. In a medium-sized bowl, whisk together flour, activated charcoal powder, baking powder, and salt to combine. Set aside.
  3. With the stand mixer’s bowl in place, combine powdered sugar, melted coconut oil, almond milk, and vanilla extract; whip until a smooth, creamy consistency is achieved.
  4. Combine the flour mixture thoroughly, ensuring a seamless integration with the other ingredients. As you continue to stir, the dough should begin to thicken gradually. If the dough appears too runny, a quick 5-minute chill in the refrigerator will help firm it up.
  5. Form two-tablespoon-sized portions of the dough into rounded spheres and arrange them on a parchment-lined baking sheet.
  6. Gently flatten the dough to a thickness of approximately half an inch using your fingertips. No worries at all, you can make them as thick as you please. Bake cookies for 8-10 minutes. Don’t overbake; cookies won’t shift in color then.
