You’ll need:
* 4 boneless, skinless chicken breasts
* 1 cup all-purpose flour
* 1 tsp paprika
* 1 tsp garlic powder
* 1 tsp salt
* 1/2 tsp black pepper
* 1 cup breadcrumbs (Panko or regular)
* 1 cup grated Parmesan cheese
* 2 large eggs
* 1 cup marinara sauce
* 1 cup shredded mozzarella cheese
Instructions:
1. Preheat your oven to 400°F (200°C).
2. In a shallow dish, mix together the flour, paprika, garlic powder, salt, and pepper.
3. Dip each chicken breast in the beaten eggs, then coat in the flour mixture, shaking off any excess.
4. Place the coated chicken on a plate or tray.
5. Heat about 1/2 inch (1 cm) of olive oil in a large skillet over medium-high heat.
6. Add 2-3 chicken breasts to the skillet and cook for about 3-4 minutes on each side, or until golden brown.
7. Remove the cooked chicken from the skillet and place it on a baking sheet lined with parchment paper.
8. Sprinkle the top of each chicken breast with some Parmesan cheese.
9. Spoon some marinara sauce over the top of the chicken breasts.
10. Sprinkle the shredded mozzarella cheese evenly over the top of the chicken breasts.
11. Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
12. Serve hot and enjoy!
