  1. Process the onion, chili, garlic, and ginger in a food processor until they combine to form a smooth, uniform paste.
  2. Sear the cumin seeds, fragrant cardamom pods, and bay leaf in a sizable saucepan over medium heat for 1-2 minutes, allowing their aromas to mingle.
  3. Sauté the pastry in a pan with a small amount of oil over medium heat until it turns a golden brown colour.
  4. Combining the chopped tomatoes and various spice powders, the mixture simmers for approximately two minutes, allowing the flavors to meld harmoniously.
  5. After adding the spinach, continue cooking until its vibrant green hue has mellowed into a subtle, tenderized state.
  6. Rinse the chickpeas under cold running water, then combine them with their accompanying liquid.
  7. Allow all components to meld together for a period of approximately thirty minutes to sixty minutes.
  8. Serve hot, seasoned to taste with salt, alongside a side of fluffy white rice.
  9. Adding a squeeze of fresh lemon juice to your plate just before eating is an excellent way to elevate the flavor of any curry or dal.
