It only takes TWO ingredients and a few minutes and you have these amazing, vegan Apricot Energy Balls! They have a lovely smooth texture and taste amazing. The recipe also only calls for 2 ingredients! Just blend dried apricots and coconut, roll into balls, and cover with more coconut! That’s it. These apricot energy balls are such an easy and healthy snack––try them out!

Apricot Energy Balls [Vegan]

Ingredients You Need for Apricot Energy Balls [Vegan]

  • 1 to 1 1/2 cups of “soft and juicy Mediterranean” dried apricots
  • ½ cup desiccated coconut
  • An additional ¼ cup of desiccated coconut

How to Prepare Apricot Energy Balls [Vegan]

  1. Blend the first 2 ingredients in a food processor, until they are combined and smooth in texture.
  2. Place the additional 1/4 cup of coconut onto a tray.
  3. Roll the apricot mixture into balls, about a heaped teaspoon per ball. Place the balls onto the tray where you put the additional coconut. Shake the tray back and forth until all the balls are covered in coconut.
  4. Serve straight away or place the apricot balls into an air-tight container and refrigerate.

Roasted Whole Chicken with Crispy Skin and Tender Baby Potatoes Recipe? Preheat your oven to 425°F (220°C). In a small bowl mix together salt, pepper, garlic powder, and dried thyme. Rub the mixture all over the whole chicken, making sure to get some under the skin as well. Place the chicken in a roasting pan breast side up. Stuff the cavity with one lemon quartered and two cloves of garlic minced. Toss 1 pound of baby potatoes with olive oil, salt, pepper, and dried rosemary leaves. Spread them out in a single layer on a baking sheet. Roast in the oven for 20-25 minutes or until they’re golden brown. After the chicken has roasted for 30 minutes, remove it from the oven and carefully pour some of its juices over the potatoes. Return the chicken to the oven and roast for an additional 10-15 minutes or until it reaches your desired level of doneness. Let the chicken rest for a few minutes before carving. Serve with the crispy baby potatoes and spoon some of those delicious juices all over the top. Enjoy!
