Vegan Baked Pasta with Broccoli: A Hearty and Nourishing Recipe

1 pound vegan pasta
2 tablespoons olive oil
1 onion, chopped
3 cloves garlic, minced
4 cups broccoli florets
1 cup vegetable broth
1 cup non-dairy milk
1 teaspoon dried basil
1/2 teaspoon salt

  • 12 1/3 ounces pasta
  • 17 2/3 ounces
  • 4 1/4 ounces carrot
  • 3 1/2 ounces
  • 4 cloves garlic
  • 3 + 2 teaspoons
  • a little fresh oregano
  • 7 ounces
  • 3 tablespoons

  • 1 teaspoon
  • salt and pepper
  • 3 tablespoons vegan grated cheese

  • Four and a half ounces of raw cashews, softened after two hours of soaking in warm water.

Crisp, satisfying, and entirely plant-based: a vegan take on classic baked pasta with broccoli that’s sure to please.

  1. While steaming the broccoli to tender perfection, cook al dente pasta simultaneously. Drain the pasta and combine it with three tablespoons of olive oil. Meanwhile, blend grated onion with carrot, garlic, and then sauté the mixture in a non-stick skillet with oregano for five minutes.
  2. To enhance the texture of the dish, add 2 tablespoons of oil to the pan during the final minute of cooking. Season with salt and pepper to taste. For a rich and creamy sauce, blend the drained cashews until smooth, then combine them with the remaining cream ingredients and whip until desired consistency is achieved.
  3. Combining the sautéed onion mixture with finely chopped broccoli, add the resulting blend to the saucepan. Next, lightly grease a Pyrex dish and fill it with the prepared pot mixture. Combine approximately half of the cream with a spoon to create a harmonious blend. Spread the rest on top.
  4. Preheat the oven to 400°F, then sprinkle the dish with cheese before baking for approximately 30 minutes.
