I find that making the peanut butter frosting a day ahead allows me to store it conveniently in the fridge for later use. I will store it securely in the refrigerator and let it come to room temperature before consumption. To ensure a smooth application of frosting to your cake, consider whipping it briefly before filling your piping bag?

  • While the frosted cupcakes remain suitable to sit at room temperature for a brief period, it’s advisable to store them in the refrigerator thereafter to ensure their quality and freshness. Store them in an airtight container, such as a cake carrier or equivalent, to prevent the biscuits from getting crushed. These products typically retain their freshness and quality for a period of 2 to 3 days when stored in the refrigerator.
  • The unfrosted cupcakes freeze great! Allow the cupcakes to reach room temperature before storing them in an airtight, freezer-safe container or zip-top bag. Store frozen cupcakes at -18°C (0°F) for up to two months; upon thawing, refrigerate them at a temperature of 4°C (39°F) until ready to frost.

  • butter, room temp ( stick)
  • creamy peanut butter
  • sifted powdered sugar
  • Milk (optional: add more for an even richer and creamier texture in your frosting).

Garnish *optional

  • Rich, velvety Hershey’s chocolate syrup, perfect for a sweet drizzle.
  • Reese’s Peanut Butter cups, chopped


Cupcakes:

  1. Preheat oven to 350°F.
  2. Combine the shortening and sugar in a mixing bowl equipped with the paddle attachment.
  3. Combining the ingredients, add in the eggs, rich vanilla extract, tangy buttermilk, and ripe bananas, then mix in the baking powder, baking soda, and a pinch of salt. Thoroughly combine ingredients, scrapping the bowl’s sides as needed to ensure a uniform mixture.
  4. Adjusting the mixer speed to a gentle low, I slowly pour in the flour, allowing the ingredients to amalgamate seamlessly as the blades work their magic, stopping just shy of overmixing.
  5. Position two muffin pans side by side and pour batter into each liner until it is approximately two-thirds full.
  6. Bake at 350°F (175°C) for 15-20 minutes or until a toothpick inserted into the center of a cupcake emerges clean, indicating they have reached the desired doneness.
  7. Allow the cooled cupcakes to sit on a wire rack until they have reached room temperature, then proceed with frosting.

Frosting:

  1. Within the pristine bowl of your stand mixer, securely affixed with the paddle attachment, combine the butter and peanut butter at a moderate pace, ensuring seamless integration.
